Amazing

Tonight’s dinner was Slowcooker Taco soup, served with homemade tortilla chips.

This recipe is not only simple but delicious, the ingredients are also very inexpensive! This pot of soup will serve 8 people or a family of 4 twice [the left overs always get eaten!] You can top this soup with cheese, sour cream or both.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (16 ounce) can chili beans, with liquid
  • 1 (15 ounce) can kidney beans with liquid
  • 1 (15 ounce) can whole kernel corn, with liquid
  • 1 (8 ounce) can tomato sauce
  • 2 cups water
  • 2 (14.5 ounce) cans peeled and diced tomatoes
  • 1 (4 ounce) can diced green chile peppers
  • 1 (1.25 ounce) package taco seasoning mix

Directions

  1. In a medium skillet, cook the ground beef until browned over medium heat. Drain, and set aside.
  • Place the ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on Low setting for 8 hours.

The tortilla chips are very easy to make I already had from having tacos last week, just cut them into the shape of chips, I use a pizza cutter to cut several at one time, then pan fry them in oil (of your choice, I had canola laying around) on high heat for 30-40 seconds per side depending on how crunchy you want the chips.

Just made this quick vid on tortilla chips made from corn tortillas for Taco soup we’ll be having tonight :) enjoy.

Tonight we had “Busy Day Chicken” Served with macaroni and cheese with green beans tomatoes and bacon and cheddar bay biscuits.

Ingredients

  • 1 (4 pound) whole chicken
  • 1 1/2 cups prepared barbecue sauce

Directions

  1. Put chicken, legs up, into slow cooker. Pour sauce over and inside the chicken. Cover.
  2. Cook for 8 to 10 hours on low setting. It is not a good idea to check it, as steam escapes and it takes quite awhile to reheat.

I’m gonna say that this recipe DID NOT taste how I thought it was going to. The ratings on it were 4.5/5, This chicken did fall right of the bones, but it was FLAVORLESS and a little dry.

If we were rating this chicken alone we would probably say 3/5 stars at the very most, I would not be making this chicken again. The rest of the chicken I don’t want to waste so, I will be making it into chicken salad for sandwiches.

For the biscuits I used the Bisquick recipe 


Ingredients

    2 1/4 cups Original Bisquick mix
    2/3 cup milk


Directions

Heat oven to 450. Stir ingredients  until soft dough forms. Drop by spoonfuls onto ungreased cookie sheet. 

 I added a cup of shredded sharp cheddar cheese and garlic pepper.

They turned out amazing

Tonight was Shake-N-Bake pork chops, Mashed potatoes and Gravy with Green beans tomatoes and bacon.

Very easy and delicious.

I always only use Baby reds for mashed potatoes [fake potatoes gross me and everyone in this house out :P], I am lazy and I hate peeling potatoes, you can leave the skins on the reds, and the amount of vitamins in the skin is amazing, so good for you.

The pork chops are just covered in Shake-n-Bake and cooked until they internal temperature reaches 165 F.

Green beans, is two cans of green beans one can of fire roasted tomatoes and crumbled cooked bacon. My family will not eat the green beans unless they are cooked like this.

This was the 1st time in my life that I have made edible gravy from scratch, EVER. I watched an instructional video that was made by my cousin on how to make the gravy. It turned out perfect infact my dad was raving about this gravy.

About the instructional gravy making video my cousin sent me from her biscuits and gravy breakfast she made this morning. I need gravy for the dinner I am making tonight, chicken fried pork chops. Lets just say that every time I even attempt gravy it’s an epic fail, so we shall see how it comes out tonight. 

EDIT: was going to be chicken fried pork chops, now it’s just shake and bake because I read the recipe wrong, but no worries my fam digs the shake and bake, still getting on with my gravy!! hope it turns out. :)

Good Morning foodies :)

This morning my family wanted waffles and bacon for breakfest so that is what we had :)

I used Bisquick for the 1st time this morning to make the waffle batter, I ususally make it from scratch but the Bisquick was on sale at Sams Club and I needed it for another recipe I’m making a little later in the week.

  • 2cups Original Bisquick® mix
  • 1 1/3cups milk
  • 1egg
  • 2tablespoons vegetable oil

 Just put it into the waffle iron (I have a Warning Pro iron) until the steam stops coming out of it.

I also added butterscotch chips to the waffles for a sweet treat, you can add so many things to waffles, I will be showing more variations later.

The bacon I cooked on the George Foreman grill, I never cook bacon, well because I hate to be splashed by the grease, then my dad brought to my attention that if I cooked it in the grill that this would not happen. The bacon came out perfect.

Tonight’s dinner was Chicken Scampi. Served with Parmesan herb angel hair pasta, salad and croissants.


Ingredients

  • 1/2 cup butter
  • 1/4 cup olive oil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 3 cloves garlic, minced
  • 3/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 4 boneless chicken breast halves, sliced lengthwise into thirds

Directions

  1. In a skillet heat the butter or margarine and oil over medium high until the butter/margarine melts. Add the parsley, basil, oregano and garlic and salt and mix together in the skillet. Stir in lemon juice.
  2. Then add the chicken and saute for about 3 minutes or until white. Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter/margarine can be added if needed.
